Thank you for sharing your wonderful recipes. You have said to add enough water to cover and simmer for 12-15 hours. Do you keep adding more water? In the past having made bone broth I usually stop simmering after 4/5 hours as the water seems to be drying up. Thank you!
Great breakdown. The way this treats bone broth as infrastructure instead of just a recipe is really smart, especially for fasting contexts where mineral repletion matters alot. I've tried the reduction method before but never got the gelatin concentration right so it'd stay solid in cube form, might have to revisit that. Also the chicken dual-use thing (broth+shredded protein) is such an overlooked efficiency win.
